I know a common thread in both the UK and the US is an overwhelming desire to try to fry everything. From the obvious potatoes (in various forms), fish, and chicken, to the more obscure, like pie, mars bars, and even butter or ice cream. To class things up a little bit, and be a bit healthier than frying already unhealthy things, mix it up with a little tempura. In addition to making tempura vegetables, I decided to go with something that adds a little protein as well as a little sweetness to round things out.

St Patrick’s Day Cupcakes

I know this is a blog that’s supposed to cross borders, and sometimes that means we should be a bit more sensitive to the various cultures that may or may not be reading this. But one of my favorite cupcake recipes has a name that…well, it’s not very sensitive. It’s based off a drink. This drink involves dropping a shot glass of Baileys & Jameson’s into a pint glass of Guinness. Because of the explosive look and the iconic Irish drinks, it’s called an Irish Car Bomb. Not a drink I would order in, say, Dublin, but tasty, and the basis for today’s cupcake recipe. But you have my permission to just think of them as Irish cupcakes: Chocolate Guinness cupcake with Jameson’s caramel sauce filling and Bailey’s buttercream frosting.

Ginger Biscuits

Don’t tell my mother but a box of these biscuits are on their way to her as I type. It’s Mother’s Day in the UK this Sunday so why not spoil your Mum a little? Even if you don’t live over here where spring is trying to push it’s way through the frost, it’s a good way to earn some brownie points.  These biscuits not only taste great but they also travel well. For this reason they were my christmas present to loads of people. Well, people in the UK, they travel well but not well enough to reach Shannon. I know this because her christmas card arrived in February. I have made these again and again and they never cease to impress me with how easy they are to make and how gorgeously tasty they are. Egg and Lentil Curry

Goodness me I love this dish. It feels and tastes like a real curry but it takes a fraction of the time and I don’t need to decide to make it a day in advance so I can prepare.  I love Madhur Jaffrey’s currys, I really do but they take time and a lot of effort.
