Yes that is a title and a half but this is a recipe worthy of it. This is another wonderful recipe from the great Madhur Jaffrey. The cookbook I own, simply named Curries, doesn’t appear to be available anymore but I have a feeling that you’ll be in good hands with any of her recipe books. This recipe she credits to the Lake Palace Hotel in Udaipur, a former royal palace placed in the middle of a lake and now on my dream holiday list.

Goodness me I love this dish. It feels and tastes like a real curry but it takes a fraction of the time and I don’t need to decide to make it a day in advance so I can prepare.  I love Madhur Jaffrey’s currys, I really do but they take time and a lot of effort.
