I am a big fan of any meal that is simple to cook, leaves minimal washing up and tastes like you’ve spent a lot more time on it than you have. So this meal is one of my stand by after work dinners but also a great starter at a dinner party.

This is adapted from a Real Simple recipe that I found through the oh-so-addictive Pinterest. I played with the quantities and added some aubergine to the mix. This would serve four with a side of cous-cous or rice, or even pasta. However I am ashamed to admit that Doug and I scoffed the entire amount with doorstep style slabs of bread in just one meal. Baked Fish

I have quite a few cookbooks in my kitchen, not to mention a food magazine subscription and a springpad account full of recipe bookmarks. I tend to use cookbooks in cycles, using one a lot and then discarding it for the new flavour of the month so sometimes I need a reminder of the books I have used and loved and all the recipes still to try. My lovely friend Emma did just this for me over at her blog Milly’s Pretty Things in this post where she talked about the series and book: Cook Yourself Thin. The concept is fairly simple, swap out fatty and sugar filled ingredients for healthier options and you can still eat the food you love. I looked out my copy and sure enough, found a recipe or twelve I wanted to try. One of these is for home made fish and chips. I’m far too lazy to make my own chips but I loved the idea for baked fish with breadcrumbs and this is my version:

I think my favourite thing about this dish is how pretty it looks. The prawns, the peppers, the onions, the colours in the salsa, even the tortillas themselves look pretty. See?

Isn’t it lovely looking? It’s also very quick which is a bonus. You could speed it up even more by buying tortillas rather than making them but they take so little time and taste good enough that I think it’s worth it. This is a great meal to make with someone else as you can tag in and out. If one person concentrates on rolling out and cooking the tortillas then the other person is free to assemble the salsa and throw the other ingredients into a pan (a wok is great for this dish though, as you’d expect from a stir fry).
